It is common practice for poultry processing facilities to submerge freshly slaughtered birds in a liquid solution containing chemicals to drop the temperature of the bird down quickly to satisfy health and safety regulations.
Our local poultry farm partners do not do that. Instead, they have invested in very large refrigeration units that cool down the birds just as fast without introducing chemicals. The turkeys we receive are sealed in cryovac (vacuum-sealed) packaging and contain some of their own liquid. This can sometimes create a natural smell but does not indicate the turkey or chicken has "gone bad." All poultry is delivered in refrigerated trucks, keeping them at or below 40 degrees throughout the delivery process. We always recommend washing your bird in water with a little bit of distilled white vinegar to clean the bird and remove any odor before you season and cook.
